Fish and Chips

Classic fish and chips made in the air fryer using a Mealthy CrispLid: crispy russet potato fries and cornflake-crumbed cod. Ready in 45 min (prep 20 min, cook 25 min).

Ingredients

3russet potatoes, peeled and cut lengthwise into ½-inch thick slices
3 tablespoons45 mlneutral cooking oil, such as canola oil
to tastekosher salt and ground black pepper
cooking spray
1/2 cup120 mlall-purpose flour
2large eggs, beaten
2 tablespoons30 mlwater
1 cup240 mlcrushed cornflakes cereal
1/4 teaspoon1.3 mlkosher salt
1 1/4 pounds565 gcod fillets, cut into large pieces

Instructions

Chips ingredients: 3 russet potatoes, peeled and cut lengthwise into ½-inch thick slices; 3 tablespoons neutral cooking oil (such as canola); kosher salt and ground black pepper to taste; cooking spray. Fish ingredients: ½ cup all-purpose flour; 2 large eggs, beaten; 2 tablespoons water; 1 cup crushed cornflakes cereal; ¼ teaspoon kosher salt; 1¼ pounds cod fillets, cut into large pieces.

  1. Toss potatoes and oil together in a bowl until potatoes are evenly coated; season with kosher salt and black pepper.
  2. Spray CrispLid fryer basket with cooking spray. Arrange potatoes in the prepared basket in an even layer.
  3. Set CrispLid trivet in inner steel pot of pressure cooker and set fryer basket on top of trivet.
  4. Set CrispLid on top of inner steel pot and plug in. Set to 400°F (200°C) and cook potatoes for 10 minutes. Flip fries and continue cooking until crisp, 7 to 10 minutes more. Lift the lid using the handle and set it on the silicone trivet. Remove fries from basket and keep warm.
  5. Add flour to a shallow bowl. Whisk eggs and water together in a separate shallow bowl. Add cornflakes to a third bowl.
  6. Sprinkle ¼ teaspoon salt over cod. Dip cod into flour, shaking excess flour back into bowl. Dip fish in egg mixture, then coat with cornflakes.
  7. Arrange cod in a single layer in the air fryer basket and cook for 4 minutes. Flip cod and cook until crisp on the outside and fully cooked on the inside, about 4 minutes more.
  8. Return fries to basket and cook for 2 minutes to heat through. Lift the lid using the handle and set it on the silicone trivet. Serve immediately.

Mealthy Tip: Season the potatoes with garlic powder for extra flavor. Sprinkle fresh parsley over the finished product for something extra fancy. Mealthy Tip: Make this a gluten-free meal by substituting almond flour or gluten-free flour for the all-purpose flour and make sure the cornflakes are gluten-free.
