
Air Fryer Peach Muffins
Moist air fryer muffins made with Greek yogurt, warm spices, and fresh diced peaches.
Ingredients
| 1/2 cup | 120 ml | butter, room temperature |
| 1/2 cup | 120 ml | dark brown sugar |
| 1/4 cup | 60 ml | granulated sugar |
| 2 | large eggs | |
| 1/2 cup | 120 ml | Greek yogurt |
| 2 teaspoons | 10 ml | pure vanilla extract |
| 1 3/4 cup | 420 ml | all-purpose flour |
| 1 teaspoon | 5 ml | baking powder |
| 1 teaspoon | 5 ml | baking soda |
| 1/2 teaspoon | 2.5 ml | ground cinnamon |
| 1/8 teaspoon | 0.6 ml | ground allspice |
| 1/2 teaspoon | 2.5 ml | salt |
| 2 tablespoons | 30 ml | milk |
| 1 3/4 cup | 420 ml | peaches, peeled and diced |
Instructions
- In a large mixing bowl, cream the butter, granulated white sugar, and brown sugar, until fluffy. Whisk in the vanilla extract, eggs, Greek yogurt, milk, and mix until well combined.
- In another bowl, add the all-purpose flour, baking powder, baking soda, ground cinnamon, salt, and ground allspice.
- Fold the dry mixture into the wet mixture, then slowly fold in the diced peaches. Spray your muffin tin with cooking spray, and then add the muffin mix, about 2/3 the way full in the muffin pan. Set the muffin pan into the air fryer basket, set the temperature to 320 degrees F, and cook for 12 to 15 minutes.
