Air Fryer Scotch Eggs with Spicy Maple Aioli

Hard-boiled eggs wrapped in seasoned turkey sausage, breaded with panko and air fried, served with a spicy maple aioli. Serving Size: 1 scotch egg.

Ingredients

500 gruncooked 98% fat-free turkey breast, ground
1 teaspoon5 mlsage
1/8 tsp0.6 mlmarjoram
1/4 tsp1.3 mlred pepper flakes
1/2 tsp2.5 mlblack pepper
1/4 tsp1.3 mlsalt
6hard boiled eggs
3/4 cup180 mlpanko bread crumbs
2large eggs
salt and pepper to taste
parsley flakes for garnish (optional)
1/2 cup120 mlmayonnaise
1/3 cup80 mlreal maple syrup
2 tsp10 mlchipotle pepper in adobo sauce

Instructions

  1. Combine mayonnaise, maple syrup, and adobo sauce in a small bowl. Refrigerate until ready to use.
  2. Mix sage, marjoram, red pepper flakes, salt, and black pepper in a small bowl.
  3. Place ground turkey in a large bowl and mix the spice mixture into the turkey using your hands. Divide turkey sausage into 6 even portions. Flatten each portion into a thin patty. Place one hard boiled egg in the middle and wrap the sausage around the eggs, sealing all sides. Set eggs aside on a plate.
  4. Preheat air fryer to 390°F (200°C). Place beaten eggs into another small bowl. Place panko bread crumbs onto a plate. Dip each sausage-wrapped egg into beaten egg, letting the excess drip off. Roll in bread crumbs and place onto a plate.
  5. Spray basket of the air fryer with cooking spray and place eggs into the basket. Do not overcrowd; cook in batches if necessary. Cook for 12 minutes, turning eggs over halfway through. Repeat with remaining eggs. Serve with dipping sauce.

Serving Size: 1 scotch egg.
