Anastasia Olives

Ingredients
| 1 kg | olives | |
| 1 l | water | |
| 133 ml | apple cider vinegar | |
| 1 tbsp | 15 ml | coarse sea salt |
| — | garlic | |
| — | thyme | |
| — | oregano | |
| 50 ml | vinegar (variant) | |
| 1 tbsp | 15 ml | citric acid (variant) |
| 1 | lemon (variant) |
Instructions
Straight method:
- Combine 1 kg olives, 1 liter water, 133 ml apple cider vinegar and 1 tablespoon coarse sea salt.
- Mix and let stand for the salt to dissolve.
- Add garlic, thyme and oregano.
- Let the olives sit in this mixture for 9 months.
Or: The same, but instead of the vinegar use 50 ml vinegar plus 1 tablespoon citric acid and 1 lemon. Again nine months.
