Apple Cake with Caramel Glaze
An apple and walnut cinnamon cake baked in the bread machine and topped with a homemade caramel glaze.
Ingredients

| 2/3 cup | 160 ml | peeled apple, cut into small pieces |
| 1 tsp | 5 ml | liquid vanilla |
| 1 cup | 240 ml | flour |
| 2/3 cup | 160 ml | sugar |
| 3/4 tsp | 3.8 ml | cinnamon |
| 1/3 cup | 80 ml | crushed walnuts |
| 3/4 tsp | 3.8 ml | baking soda |
| 1/4 cup | 60 ml | raisins (optional) |
| 1/2 cup | 120 ml | sugar (for caramel glaze) |
| 1/4 cup | 60 ml | butter (for caramel glaze) |
| 1/4 cup | 60 ml | liquid cream (for caramel glaze) |
Instructions
This portion is for a bread machine whose basket is vertical. A larger portion cannot be baked in such a machine!!! If your bread machine has a horizontal basket (like an elongated cake pan, but a bit taller), make a double portion.
Everything is put into the machine's basket and the cake program is selected (2 hours). The walnuts and raisins can be added after the signal for adding nuts, but I put everything in at the very beginning.
Caramel glaze: The sugar is caramelized, the butter and cream are added, and it is stirred until everything comes to a boil and becomes a uniform mixture. It is left to cool and thicken and poured over the warm (not hot) cake.
Note: The glaze is made right after the cake is put into the machine; during those 2 hours it cools and thickens.
