Apple Cake in the Bread Machine with Caramel Glaze

A small apple and walnut cake baked in the bread machine on the cake program, topped with a homemade caramel glaze.

Ingredients

2eggs
1/4 cup60 mloil
2/3 cup160 mlpeeled apple cut into small pieces
1 tsp5 mlliquid vanilla
1 cup240 mlflour
2/3 cup160 mlsugar
3/4 tsp3.8 mlcinnamon
1/3 cup80 mlcrushed walnuts
3/4 tsp3.8 mlbaking soda
1/4 cup60 mlraisins (optional)
1/2 cup120 mlsugar (caramel glaze)
1/4 cup60 mlbutter (caramel glaze)
1/4 cup60 mlliquid cream (caramel glaze)

Instructions

Put everything into the machine and select the cake program (2 hours). The walnuts and raisins can be added after the signal for adding nuts, but I put everything in right at the start.

Caramel glaze: Caramelize the sugar, add the butter and cream, and stir until everything comes to a boil and becomes a uniform mixture. Leave it to cool and thicken, then pour over the warm (not hot) cake.

Note: Make the glaze right after you put the cake in the machine — during these 2 hours it cools and thickens.

Drawback: It is very small and finishes quickly — in fact the quantity is half that of a normal cake. I have tried making one and a half times the recipe, but the top could not bake, perhaps because my basket is one of the vertical type.
