Apple Cider and Thyme Grilled Pork Chops

Spice-rubbed pork chops grilled and basted with a tangy apple cider, maple and orange glaze finished with fresh thyme.

Ingredients

1 - 1 1/2 lb455–680 gboneless pork chops
2 tbsp30 mlbrown sugar
2 tsp10 mlchili powder
1 tsp5 mlgarlic powder
1 tsp5 mlsalt (rub)
1 tsp5 mlfresh thyme, minced
1/2 tsp2.5 mlpepper
1 tbsp15 mlolive oil
1 1/2 cups360 mlapple cider
1/4 cup60 mlmaple syrup
1 tbsp15 mlgrainy Dijon mustard
2 tsp10 mlorange zest
1/2 tsp2.5 mlcrushed red pepper flakes
1/2 tsp2.5 mlsalt (glaze)

Instructions

  1. Combine the cider glaze ingredients in a small saucepan and whisk together. Bring to a low boil, then reduce the heat to low and simmer.
  2. Preheat your grill pan or outdoor grill over medium / medium-high heat.
  3. In a small bowl, stir together the spice rub ingredients; the mixture will resemble a dry paste.
  4. Pat the pork chops dry, then rub liberally with the spice mixture, massaging it into the meat.
  5. Once the grill is hot, spray with cooking oil and add the pork chops. Brush with the simmering sauce and grill about 4 minutes.
  6. Flip the chops, brush with sauce and grill about 4 more minutes, continuing to brush liberally with glaze as they cook.
  7. Once cooked through, remove to a plate and rest a few minutes.
  8. Drizzle with the remaining sauce and sprinkle with fresh thyme before serving.

Notes: If using bone-in pork chops, increase the cooking time accordingly. Recipe adapted from Delightful E Made.
