Authentic Picadillo with Rice

Ready in 1 hr (prep 15 min, cook 25 min). Servings 4-6-8-10. Ground beef simmered with potatoes, carrots, peas and raisins, served over white rice cooked pot-in-pot.

Ingredients

1.5 tsp7.5 mlvegetable oil
1.33 pound605 gground beef
1.33yellow onion, diced
2.66white potatoes, peeled and cut into 1/2-inch pieces
2.66carrots, sliced
1.33 cup320 mltomato puree
1.33 cup320 mlfresh or frozen green peas
0.66 cup160 mlraisins
1.25 tsp6.3 mlMexican oregano
1.25 tsp6.3 mlsalt
1.25 tsp6.3 mlground black pepper
2.66 cup640 mlwater
2.66 cup640 mlwhite rice, rinsed until water runs clear
fresh cilantro to garnish

Instructions

Servings: 4-6-8-10. Ready in 1 hr; Prep time 15 min; Cook time 25 min.

  1. Heat oil in inner steel pot of pressure cooker set to Saute on High. Saute ground beef in hot oil, breaking beef up as it cooks, until browned, 4 to 6 minutes.
  2. Stir onion into beef and continue sauteing until onions are translucent, 3 to 4 minutes. Press Cancel to turn off Saute.
  3. Stir potatoes, carrots, tomato puree, peas, raisins, Mexican oregano, salt, and ground black pepper into beef mixture.
  4. Line inside of steamer basket with aluminum foil so that it will not leak; combine water and rinsed rice in lined steamer basket (or use an oven-safe uncoated glass bowl or stainless steel bowl).
  5. Place trivet on beef mixture and place lined steamer basket/bowl with rice on trivet.
  6. Lock pressure cooker lid in place and set steam vent handle to Sealing. Select Pressure Cook (Manual) and cook on High Pressure for 15 minutes. Move steam vent handle to Venting to quick-release pressure.
  7. Carefully remove steamer basket with rice from pressure cooker; fluff rice with a fork.
  8. Spoon picadillo into bowls with rice and garnish with fresh cilantro.

Mealthy Tip: Quinoa and brown rice are great substitutes for white rice. Add minced jalapeno to give the picadillo a little spicy kick!
