Baked Meatballs with Bacon and Mozzarella
Ingredients
| 600 g | minced meat | |
| 250 g | bacon | |
| 125 g | mozzarella | |
| 1 head | onion | |
| 1 | slice of white bread | |
| 1 | egg | |
| 2 tsp | 10 ml | oregano |
| — | parsley | |
| 1 | lemon | |
| — | olive oil | |
| — | black pepper | |
| — | salt, to taste |
Instructions
- First mix the minced meat together with the egg, the grated onion, the oregano, the parsley and the bread — soaked in water and squeezed out. Mix in the salt to taste, the grated lemon zest and the black pepper.
- Then take the mozzarella and cut it into cubes. After that shape the meatballs, filling them with mozzarella inside and then closing them well. This is important so the cheese does not leak out while they bake in the oven.
- Finally, wrap these meatballs with two strips each of the sliced bacon. Arrange them in a baking dish that you have previously lined with parchment paper and drizzle them with a little olive oil.
- Bake them in the oven, which you have already preheated to 200 degrees. Once they are fully done, serve these tasty baked meatballs with a side of your choice.
You can combine them with a potato salad with onion, to keep it lighter, because fried potatoes weigh a little on the overall meal. It is best, however, if you garnish them with some kind of fresh salad — it can be green, it can be with tomatoes and arugula, or a plain mixed salad. It turns out a truly great treat.
