
Tart with a Banana Base
A vegan tart with a banana, coconut and carob base, topped with a fruit filling of blitzed frozen berries.
Ingredients
| 3 | Bananas | |
| 8-9 tbsp | 120–135 ml | Desiccated coconut |
| 2-3 tbsp | 30–45 ml | Coconut flour |
| 3 tbsp | 45 ml | Coconut oil, melted |
| 2 tbsp | 30 ml | Carob flour |
| 1/2 | Package of frozen strawberries or other forest fruits |
Instructions
Makes small tart forms.
- Take the frozen fruit out of the freezer to soften a little.
- Mash the bananas into a puree. Add the coconut flour and stir. Add the carob flour and stir again.
- Gradually add the desiccated coconut. Mix everything well until you get a soft, sticky dough. If needed, add more coconut oil.
- Grease the forms with coconut oil and turn on the oven to heat to 180°C.
- Take some of the mixture and distribute it evenly into each of the forms. With your fingers, gently press it into the base and sides.
- Bake for about 15 minutes or until the edges start to brown.
- While the tart is baking, blitz the slightly thawed fruit in a food chopper.
- Spoon the blitzed fruit over the baked tart and sprinkle with desiccated coconut.
