
Banana Cake
A cinnamon-spiced banana cake made from mashed ripe bananas, baked in the bread machine on the CAKE program, with optional walnuts and chocolate chips.
Ingredients
| 3 | large eggs, lightly beaten | |
| 1/2 cup | 120 ml | oil |
| 1 tsp | 5 ml | vanilla extract |
| 2 1/2 cup | 600 ml | sifted flour |
| 1 tbsp | 15 ml | baking powder |
| 1 tsp | 5 ml | baking soda |
| 1 cup | 240 ml | sugar |
| 1/2 tsp | 2.5 ml | salt |
| 2 tsp | 10 ml | cinnamon |
| 3 | soft bananas, mashed with a fork into puree (about 1 1/2 cups puree) | |
| 1/2 cup | 120 ml | crushed walnuts (optional) |
| 1/2 cup | 120 ml | chocolate chips (optional) |
Instructions
All the ingredients are put into the machine's basket. Select the CAKE program (on my machine it is 2 hours). Follow the machine's instructions.
Optionally, you can add 1/2 cup of crushed walnuts and/or 1/2 cup of chocolate chips at the add-in signal (if your machine has one; if not, add them 10-15 minutes from the start of the mixing).
