
Banana Fritters
Sweet chunks of banana dipped in a creamy spiced batter and deep-fried until golden, then dusted with sugar.

Ingredients
| 4 | large bananas | |
| 1 cup | 240 ml | all-purpose flour |
| 1½ tsp | 7.5 ml | baking powder |
| 1 tsp | 5 ml | cinnamon |
| ¼ cup | 60 ml | white sugar |
| a pinch | salt | |
| 1 cup | 240 ml | yogurt |
| 1 | egg white | |
| — | vegetable oil, for frying | |
| — | powdered sugar, for dusting |
Instructions
- In a mixing bowl combine the flour, salt, baking powder, cinnamon and sugar.
- Add the yogurt and egg white and mix well, loosening with a little water and oil until the batter is thick and smooth — about the consistency of cream. Don't make it too thick or too thin.
- Pour vegetable oil into a deep pan, filling it about one third full, and heat to 350°F (175°C).
- Peel the bananas and cut them into even pieces. Dip each piece into the batter to coat.
- Lower the pieces into the hot oil and fry until golden brown all over.
- Lift out and drain on paper towels to remove excess oil.
- Coat or dust with powdered sugar (or coconut). Garnish with fruit syrup or serve with a scoop of ice cream.
