
Bang Bang Shrimp

Ingredients

| 1 1/2 pounds | 680 g | raw medium shrimp, peeled and deveined |

| 6 tablespoons | 90 ml | Sriracha hot sauce |
| 3 tablespoons | 45 ml | sweet Thai chili sauce |

Instructions
- Combine 1 cup flour and salt in a shallow dish. Beat remaining flour, buttermilk, and eggs in a separate shallow dish until smooth and thickened. Add panko bread crumbs to a third shallow dish.
- Lightly dredge shrimp in flour. Dip shrimp into buttermilk mixture and let excess liquid drip back into dish. Dredge shrimp in panko bread crumbs mixture until evenly coated.
- Arrange shrimp in CrispLid fryer basket in a single layer, working in batches as needed and spray with cooking spray.
- Set CrispLid trivet in inner steel pot of pressure cooker and set fryer basket on top of trivet.
- Set CrispLid on top of inner steel pot and plug in. Set to 375°F (190°C) and cook for 5 minutes. Flip shrimp and cook until golden brown, 5 to 6 minutes more. Lift the lid using the handle and set it on the silicone trivet. Carefully remove shrimp from air fryer and place in a bowl. Repeat cooking with remaining shrimp.
- Whisk mayonnaise, Sriracha, and sweet chili sauce together in a small bowl until sauce is smooth.
- Add ½ the sauce to the bowl and toss shrimp to coat. Add more sauce as desired.
- Garnish shrimp with diced green onions and sesame seeds.
Mealthy Tip: If you don't have buttermilk, you can make it at home. Just mix ½ cup milk with 1½ teaspoons lemon juice and let sit for 5 minutes. Try black sesame seeds instead of white sesame seeds.
