Banitsa with Sparkling Water in a Cake Tin

A quick torn-filo cheese banitsa baked in a cake (loaf) tin, made airy with sparkling water and baking powder.

Ingredients

200 млsparkling water
120 млoil
1 бр.baking powder
6 бр.eggs
300 гр.cow's milk cheese
500 гр.banitsa filo sheets

Instructions

The rolled sheets, as they are coiled, are cut into strips about 1 cm wide. The resulting little snails are separated well into ribbons, the aim being that there are no stuck-together strips.

In a bowl beat the eggs, add the oil, the baking powder, the sparkling water and the crumbled cheese. Stir and add the separated sheets. All of them should be well soaked in the mixture. Grease a cake tin, preferably Teflon or silicone, and pour in the ready mixture. Bake at 180 °C for about 40 minutes.

Another version (secret): Banitsa recipe. 4 eggs, 1 packet of sheets "Familia", 1 cup yogurt, 1 cup lemonade, 1 tsp baking soda, 5-6 tbsp oil. The sheets cut into strips, the tin greased with oil and dusted with flour (because it's aluminium). And one secret: the strips of sheet are only dipped into the mixture and placed into the tin, not stirred into it. That's why my first attempt failed - because when I stirred them into the mixture they turned into dough. Bake at 200 degrees until browned.
