Barbecued Saury (Fish)

A Food Wars!: Shokugeki no Sōma dish: grilled saury glazed with a bold, unconventional mixture of maple syrup, condensed milk, chocolate syrup, habanero, and ramune.

Ingredients

2 fishPacific saury (sanma)
2 tbsp30 mlMaple syrup
2 tbsp30 mlCondensed milk
1 tbsp15 mlChocolate syrup
1Habanero pepper
1 splashRamune (Japanese soda)
To tasteSalt

Instructions

From Food Wars!: Shokugeki no Sōma. The saury is glazed with maple syrup, condensed milk, chocolate syrup, habanero, and ramune.

(reconstructed classic method)

  1. Clean and gut the saury, then pat dry and score the skin. Season lightly with salt.
  2. Prepare the glaze: in a bowl, whisk together the maple syrup, condensed milk and chocolate syrup. Finely mince the habanero and stir it in, then loosen the glaze with a splash of ramune.
  3. Preheat the barbecue to medium-high heat.
  4. Grill the saury for a few minutes on each side until the skin is charred and the flesh is cooked through.
  5. During the last minutes of grilling, brush the fish generously with the glaze, turning to caramelize it on all sides.
  6. Serve hot, drizzled with any remaining glaze.
