Basic Mochi (Plain)
The foundation of Japanese confectionery — soft, chewy, and endlessly versatile.
Ingredients
| 1 cup (130g) | glutinous rice flour (mochiko) |
| 1/4 cup (50g) | sugar |
| 3/4 cup (180ml) | water |
| — | potato starch or cornstarch, for dusting |
Instructions
- Combine glutinous rice flour, sugar, and water in a microwave-safe bowl and mix until smooth.
- Cover loosely with plastic wrap and microwave on high for 2 minutes.
- Stir well, then microwave another minute until the dough becomes translucent and sticky.
- Dust a clean surface generously with potato starch. Transfer the hot mochi onto the dusted surface and fold a few times until smooth.
- Divide and shape as desired. Serve immediately or wrap individually in plastic wrap.
