Beef Bulgogi

Thinly sliced beef marinated in a sweet-savory soy, honey and sesame sauce, grilled until the edges crisp and served over rice with kimchi and fresh vegetables — Korean BBQ at home.

Ingredients

1.5 lb680 grib eye or top sirloin, thinly sliced 1/8 inch
4 Tbsp60 mlsoy sauce
4 Tbsp60 mlhoney
2 Tbsp30 mlbrown sugar
1 Tbsp15 mlred pepper flakes
4garlic cloves, finely minced
1 Tbsp15 mlsesame oil
1small sweet onion, thinly sliced
green onion, finely chopped
4 cups960 mlcooked rice
1 cup240 mlred cabbage
1 cup240 mlbean sprouts
sriracha (optional)
1 1/2 cups360 mlkimchi
1 cup240 mlcucumbers, sliced

Instructions

  1. For the beef, combine the soy sauce, honey, brown sugar, red pepper flakes, garlic and sesame oil in a small bowl. Arrange the meat in a single layer in a shallow baking dish with the sliced sweet onion on top. Pour the sauce over the meat and marinate at least 2 hours, preferably overnight.
  2. Preheat a grill on high heat. Place the marinated meat on the oiled grill and cook thoroughly until the edges are crispy. (Alternatively, heat 2 Tbsp olive oil in a skillet over high heat until it begins to smoke, then cook the meat in small batches, moving it around until cooked through and the edges crisp. Continue with the remaining beef.) Sprinkle the cooked beef with the green onions on a serving platter.
  3. To assemble the bowls, layer the meat, kimchi, cabbage, cucumbers and sprouts over the rice and drizzle with sriracha if you like it spicy.
  4. Other vegetables that are wonderful here include carrots, radishes, bell peppers, shiitake mushrooms, avocado or cilantro — even a fried egg. Have fun with the possibilities and enjoy!
