Beef Offal – Horumon (Large Intestine)
Horumon, the fatty beef intestine, is a yakiniku staple — chewy, rich, and irresistibly savory when charred over high heat with a spiced marinade.

Ingredients
| 12 oz (340g) | cleaned beef large intestine, cut into 2-inch (5cm) pieces | |
| 2 tablespoons | 30 ml | soy sauce |
| 1 tablespoon | 15 ml | sake |
| 1 tablespoon | 15 ml | mirin |
| 1 teaspoon | 5 ml | sesame oil |
| 2 cloves | garlic, minced | |
| 1/2 teaspoon | 2.5 ml | gochujang (optional) |
| 1 tablespoon | 15 ml | vegetable oil |
Instructions
- Blanch the intestine pieces in boiling water for 5 minutes to remove impurities. Drain and pat dry.
- Combine the soy sauce, sake, mirin, sesame oil, garlic and gochujang. Toss the intestine pieces and marinate for 30 minutes.
- Grill over medium-high heat, turning frequently, for 5 to 7 minutes until charred and cooked through. The fat should render and crisp slightly at the edges.
- Serve with raw garlic slices, kimchi and fresh perilla leaves.
