Beef souvlaki kebabs with tzatziki sauce

Marinated steak skewers served with homemade Greek tzatziki sauce. Prep time does not include marinating time of 1-24 hours.

Ingredients

1/4 cup60 mlolive oil (editor: 1/3 cup)
1 tbsp15 mlminced garlic (3 large cloves)
2 tbsp30 mlchopped fresh oregano (or 1 tablespoon dried)
1 tsp5 mlsalt (or to taste)
1/4 tsp1.3 mlblack pepper
1juice of one medium lemon (editor: juice and zest of two oranges; Jaci did not like the orange, wants lemon)
1 1/2 - 2 pounds680–905 gthick-cut steak (sirloin or new york strip work well) (editor: 4 minute steaks - 800 g, pounded)
1/2 cup120 mlred wine
1cucumber, peeled and sliced + 1/2 teaspoon salt (for tzatziki)
2 cups480 mlcold plain Greek yogurt (for tzatziki)
4 tsp20 mlminced garlic (for tzatziki)
1/3 cup80 mlchopped dill, fresh or frozen (may sub 2 tablespoons dried dill) (for tzatziki)
1 1/2 tbsp23 mlfreshly squeezed lemon juice (for tzatziki)
1/2 tsp2.5 mlsalt, or to taste (for tzatziki)
1/8 tsp0.6 mlblack pepper, or to taste (for tzatziki)

Instructions

  1. Chop steak into 1-inch pieces and set aside. Combine oil, garlic, oregano, salt, pepper, and lemon juice and stir to combine. Combine steak and marinade in a large zip lock bag, press as much of the air out as you can, and seal. Chill for 1 hour or up to 24 hours (the longer you can marinate the more tender and flavorful the meat will be).
  2. Spread cucumber slices out on a paper towel. Sprinkle generously with salt on both sides and allow to rest for 5 minutes. Wrap cucumber slices in paper towels, squeeze excess liquid out, and transfer to a food processor or blender. Add remaining sauce ingredients to blender and pulse until smooth and creamy. Chill until ready to use.
  3. When ready to cook your kebabs, thread the steak pieces onto skewers and discard marinade. Grill over medium-high heat for 10-12 minutes (or 20 min at 190 C in a preheated air fryer), rotating throughout to ensure even cooking. Alternately you can bake them in a large baking dish arranged in a single layer at 400 degrees for 30-40 minutes until cooked through.
  4. Garnish with chopped oregano and serve immediately with prepared tzatziki sauce.
