Beer-Braised Crock Pot Rabbit

A true hunter's delight that tastes delicious after a day in the great outdoors. While it does take a little more time, this is one of the great recipes for cooking rabbit that everyone should know by heart. It is also great in a Dutch oven; simply follow the recipe then place the oven on preheated coals that you've placed in a dug-out hole. Cover with coals and cook.

Ingredients

1rabbit
3potatoes, peeled
3carrots
1onion
1 cup240 mlmushrooms
1 cup240 mluncooked rice
salt
pepper
oil
1 cup240 mlbeer
1/4 cup60 mlchili sauce
2 tablespoons30 mlbrown sugar
1garlic clove

Instructions

  1. Put 3 peeled potatoes and carrots, 1 onion, 1 cup of mushrooms and 1 cup uncooked rice in a crock pot. Leave out the rice if you don't like the mushier consistency.
  2. Season the rabbit with salt and pepper, then brown it in oil.
  3. Put the rabbit in the crock pot on top of the vegetables.
  4. Combine 1 cup beer, 1/4 cup chili sauce, 2 tablespoons brown sugar and 1 garlic clove, then pour over the meat.
  5. Cook on high for 3 1/2 hours, then check.
  6. Serve with thick-sliced bread and a glass of cold beer.
