
Belgian Liège Waffles with Honey
Yeasted Belgian Liège waffles enriched with honey and studded with crunchy pearl sugar.
Ingredients
| 1/2 cup | 120 ml | whole milk, lukewarm |
| 1/3 cup | 80 ml | water, lukewarm |
| 3 tsp | 15 ml | instant yeast |
| 2 | large eggs, at room temperature and beaten | |
| 1 tbsp | 15 ml | vanilla |
| 2 tbsp | 30 ml | honey |
| 3 tbsp | 45 ml | light brown sugar |
| 3/4 tsp | 3.8 ml | fine salt |
| 3 2/3 cup | 880 ml | bread flour (16.5 ounces) |
| 2 stick | unsalted butter, cubed and at room temperature (8 ounces) | |
| 1 1/2 cup | 360 ml | pearl sugar (or sugar cubes, broken into pieces) (8 ounces) |

- In the bowl of an electric mixer fitted with the dough hook, combine the milk, water, yeast, eggs, honey, vanilla, sugar, and salt. Mix until well combined.
- On low speed, add in all but 1 cup of flour and mix until combined. On low speed, add the butter, one cube at a time, thoroughly kneading in each addition and scraping down the bowl as needed before adding in any more butter. Once all the butter has been incorporated, add the remaining flour and knead on low speed until the dough is smooth and elastic, about 5 minutes.
- Remove the dough to a lightly oiled bowl and cover tightly with plastic wrap. Let rise until doubled, about 2 hours. Punch the dough down, cover again with plastic, and place in the fridge overnight or up to 24 hours.
- When ready to cook, heat up a Belgian waffle iron. Remove the dough from the fridge and knead in all of the pearl sugar. Divide the dough into 10 equal pieces and roll each piece into a ball.
- Place first ball of waffle dough on grid and cook according to waffle maker's instructions. Cook until deeply golden all over, about 4 to 5 minutes. Carefully transfer with tongs or a fork to baking sheet.
- Keep waffles warm in a 200°F oven if you plan to eat them right away. These waffles must be served warm or the pearl sugar will harden. Freeze any leftover waffles and reheat in a 200°F oven until warmed through.

Ingredients:
- 1 head of fresh broccoli (you will only need 1 cup processed)
- 1 cup mozzarella shredded cheese
- 1/3 cup Parmesan cheese
- 2 whole eggs
- 2 tablespoons Mrs. Dash Spice (I like garlic & herb)
- 2-3 tablespoons fresh chives
- 2-3 tablespoons fresh parsley
Method:
- Chop broccoli into small florets and process in a food processor (you can use the stalk too!) until it resembles small granules. *You will have more than enough for one batch
- Measure 1 cup of broccoli with cheeses, eggs, spices and herbs and mix in a bowl until combined.
- Heat your waffle iron to a medium-high heat and spray it generously with oil.
- Portion out 1/3 of mixture onto waffle iron, press out (the mixture is not liquidy at all) and cook. All waffle irons will vary on cook time. Mine took about 2.5 minutes to be done, but I also have a thinner waffle iron.
- Cover finished waffles with aluminum foil to keep warm while you finish cooking the rest!
- Top with poached or fried eggs, cream cheese, smoked salmon or even use them as bread for a sandwich!
Making these waffles are super simple! Basically just mix everything together and get to it! You just need 2 key kitchen tools, a waffle maker and a food processor. With less than 2 carbs each, this is a great recipe to get in some healthy veggies!
