Biscoff Cinnamon Rolls

Soft yeasted cinnamon rolls filled with Biscoff spread and topped with cream cheese frosting and crushed Biscoff cookies.

Ingredients

3 cups720 mlall-purpose flour
1 packetactive dry yeast
1/4 cup60 mlgranulated sugar
1 tsp5 mlsalt
1/2 cup120 mlmilk
1/4 cup60 mlunsalted butter
2large eggs
1 cup240 mlBiscoff spread
1/2 cup120 mlbrown sugar
2 tbsp30 mlground cinnamon
1/4 cup60 mlunsalted butter (filling)
4 oz115 gcream cheese
1/2 cup120 mlpowdered sugar
2 tbsp30 mlmilk (frosting)
1/4 cup60 mlcrushed Biscoff cookies

Instructions

  1. Activate yeast in warm milk, combining with sugar until foamy and fragrant.
  2. Mix flour and salt in a large mixing bowl, creating a well in the center.
  3. Pour yeast mixture and melted butter into flour, incorporating eggs to form a soft, elastic dough.
  4. Knead dough for 8-10 minutes until smooth and springy, then place in a greased bowl.
  5. Cover and let rise in a warm spot for approximately 1 hour, or until doubled in size.
  6. Roll out dough into a large rectangular shape on a lightly floured surface.
  7. Spread softened Biscoff spread evenly across the dough, leaving a small border around edges.
  8. Sprinkle brown sugar and ground cinnamon over Biscoff spread.
  9. Roll the dough tightly from the long side, creating a log-like shape.
  10. Slice the roll into 12 equal portions using a sharp knife or dental floss.
  11. Arrange rolls in a buttered baking dish, allowing space for expansion.
  12. Cover and let rise for an additional 30 minutes at room temperature.
  13. Preheat oven to 375°F and bake rolls for 20-25 minutes until golden brown.
  14. Whip cream cheese with powdered sugar and milk to create a smooth frosting.
  15. Once rolls are cooled, generously spread frosting and sprinkle crushed Biscoff cookies on top.
