
South Africa - Boere Pap (corn bake)
South African Boere Pap - a baked cornmeal (polenta) casserole with bacon, onion, sweetcorn, eggs and Emmental cheese. Suggestion: goes well with a fresh salad.

Ingredients

| 500 g | fine cornmeal (polenta) |
| 250 g | bacon, in strips |
| 120 g | butter |
| 2 cans | canned sweetcorn (285 g drained weight) |

| — | black pepper |
| — | nutmeg, grated |
| — | fat/grease (for the dish) |
| 400 g | grated Emmental cheese |
Instructions
Preparation time: 60 min
- Hard-boil the eggs. Peel the onions and cut into cubes. Bring the stock (water) to a boil, sprinkle in the cornmeal and cook for 10 min over low heat, stirring from time to time.
- Meanwhile, fry the onion and bacon for 2-3 min in 1 tablespoon of heated butter. Douse the eggs with cold water, peel them and cut into cubes. Drain the liquid from the canned corn.
- Mix the remaining butter into the porridge and pour into a bowl. Add the bacon and onion, the corn and the eggs, stir and season with salt, black pepper and nutmeg.
- Pour the porridge into a large shallow greased baking dish and smooth the surface. Sprinkle the Emmental cheese on top and bake for about 35 min in an oven preheated to 200 C.
Suggestion: A fresh salad goes well with this dish.
