
Bole - Fruit Liqueur
A traditional Bulgarian homemade fruit liqueur (though placed in the book's Latin section, this is a Bulgarian recipe based on rakia).

Ingredients

| 1 cup | 240 ml | White wine |
Instructions
This liqueur is unique in both flavour and appearance. I make it in a 3-litre jar. Here is how:
- First pour the rakia into the jar, then add 1 coffee cup of sugar and the same amount of strawberries, followed by the next fruits - adding all kinds of fruit up until autumn.
- Cut the larger fruits (apples, pears, quinces, melon) into pieces. Finally add 1-2 mandarins in slices, as well as one orange and one lemon.
- The rule is: a cup of fruit - a cup of sugar. The rakia must always cover the fruit, by at least two fingers. Stir from time to time so the sugar dissolves.
- Keep in a dark, cool place. After the last fruit is added, pour in the wine. After 10 days the liqueur is ready to drink.
- Serve the liqueur in a wide glass with an ice cube and a small spoon, for the pieces of fruit.
