
Bourbon Bacon Cheeseburgers
Juicy grated-onion cheeseburgers crowned with a rich, sweet-savory bourbon bacon jam.

Ingredients
| 12 oz | 340 g | bacon |
| 1 | sweet onion | |
| 3-4 cloves | garlic | |
| ⅔ cup | 160 ml | apple cider vinegar |
| 5-6 Tbsp | 75–90 ml | brown sugar |
| 5 Tbsp | 75 ml | bourbon |
| 5 Tbsp | 75 ml | water |
| 1 pinch | cayenne pepper | |
| 2 lbs | 905 g | ground beef 85/15 |
| 1 | small sweet onion | |
| 1 Tbsp | 15 ml | heavy cream |
| 4 slices | white American cheese | |
| 4 | brioche buns | |
| — | green leaf lettuce |
Instructions
- Sauté bacon over medium heat until crispy, 8-12 minutes; drain excess grease. Add onion and garlic, cook 3-5 minutes until soft.
- Add vinegar, brown sugar, bourbon, water, cayenne and pepper. Bring to a boil, then simmer 10-15 minutes until thick and syrupy. Use immediately or refrigerate.
- Toast the buns cut-side down in a little olive oil; set aside.
- Mix ground beef with cream, salt and pepper, and grate about 2 Tbsp onion (with its juice) into the meat. Mix gently and form 4 patties, making a thumb indent in each.
- Cook burgers in a little oil over medium heat about 5 minutes per side to desired doneness. In the last minute, top with cheese and cover the pan with foil to melt.
- Serve on toasted buns with lettuce and bourbon bacon jam.
