
Caramelized Onion Beef Sliders
Smashed beef sliders with melting Gruyere, sweet caramelized onions, peppery bacon and A1 mayo on toasted slider buns.

Ingredients

| 2 sprigs | fresh thyme | |
| 3 Tbsp | 45 ml | butter |
| 2 lbs | 905 g | ground beef or brisket |
| 2 | beef bouillon cubes | |
| 1 tsp | 5 ml | dried minced onion |
| ½ tsp | 2.5 ml | celery seed |
| ½ tsp | 2.5 ml | dried parsley |
| ½ tsp | 2.5 ml | dried thyme |
| 8 oz | 225 g | Gruyere, grated |
| 1 lb | 455 g | bacon |
| ½ cup | 120 ml | mayo |
| 1 tsp | 5 ml | A1 steak sauce |

Instructions
- Onions: melt butter over medium, add halved onion rings and thyme, reduce to medium-low and cook 40 minutes, stirring often, until caramel brown.
- Bacon: sprinkle with pepper and cayenne and cook to desired crispness (baking works well).
- Mayo: whisk mayo, A1 and pepper; refrigerate.
- Burgers: mix beef with bouillon, dried onion, celery seed, parsley, thyme and pepper. Divide into 12 equal balls.
- Heat a griddle or skillet over high with butter. Add balls a few inches apart, cook 2 minutes undisturbed, flip and immediately smash flat. Cook 2 minutes, flip again.
- Top with shredded Gruyere and cook until melted. Rest under foil while you cook the rest.
- Build each slider: arugula, patty, caramelized onions, half a bacon slice, and A1 mayo on the top bun.
