Cast Iron Roasted Chinese Chicken Thighs

A superfast and easy roasting method. 30 minutes or less. Serves 2 to 4.

Ingredients

2 tablespoons30 mlvegetable oil, for greasing
1 pound455 gboneless, skinless chicken thighs, at room temperature
2 tablespoons30 mlfresh ginger, crushed and chopped
2 tablespoons30 mlsoy sauce
2 tablespoons30 mlhoney
2 tablespoons30 mlketchup
3garlic cloves, crushed and chopped

Instructions

  1. Grease a cast iron or oven-safe griddle or pan with the oil. Place the griddle 2 to 3 inches under the broiler element, set the broiler to high, and let the griddle heat for 10 minutes, or until it just begins to smoke.
  2. Seal the chicken, ginger, soy sauce, honey, ketchup, and garlic in a large zip-top bag. Massage for 2 minutes.
  3. Place the marinated chicken on the hot griddle and broil for 6 to 8 minutes, or until your desired doneness is reached. There's no need to flip the chicken because the hot cast iron will sear and cook it from the bottom.
  4. Serve immediately.

Substitution tip: If you're using boneless chicken breasts, flatten them to a uniform 1/4-inch thickness by covering them with plastic wrap and pounding them with a heavy object before marinating.
