BackCheddar and Thyme Scones

Cheddar and Thyme Scones

Savoury sourdough scones with grated cheddar, fresh thyme and black pepper — best eaten freshly baked.

Ingredients

150 г.white flour
50 г.wholemeal flour
5 г.baking powder
3 г.bicarbonate of soda
5 г.salt
1/2 ч. л.black pepper
10-15 стръкаfresh thyme
50 г.cold butter, cut into cubes
150 г.sourdough starter 100% hydration (can be replaced with equal amounts water and flour — 75 g each)
100 г.cheddar cheese, grated
60 г.thick yogurt

Instructions

Products for cheddar and thyme scones — 10 pieces.

  1. Turn the oven on to preheat to 200 degrees without a fan.
  2. In a bowl combine the two types of flour, the baking powder, the soda, the thyme leaves, the salt and the black pepper.
  3. Add the butter and rub with your fingers until crumbs form. You can also do this in a food processor.
  4. Add the sourdough starter, the yogurt and the grated cheddar and knead a dough. Depending on how the flour absorbs the moisture you may need to add a tiny bit of milk (or 1 tablespoon of cold water) until the dough comes together.
  5. On a very lightly floured surface, roll out the dough to a thickness of 1-1.5 cm. Using a biscuit cutter or a glass, form the scones and arrange them on a tray lined with baking paper, leaving about 1 cm space between them. As mentioned above, you can also shape them by hand, but try to make the scones an even size.
  6. Optionally, brush with milk before putting them in to bake.
  7. Baking — 15-20 minutes in a preheated oven at 200 degrees.
  8. Once you take the finished scones out of the oven, let them cool for a few minutes. They are tastiest freshly baked, but if any are left over, which I doubt, you can store them in a box until the next day. Warm them in the oven at 150 degrees for no more than 5 minutes and serve.

Note: I wrote that the products are for 10 scones, but mine are on the larger side. If you make them smaller, the count will be higher. Don't forget to leave a little space when arranging them, because they puff up slightly. The puffing is more upward, i.e. they don't spread sideways, so about 1 cm of space will be enough.
