Cheese Stuffed Burgers (Juicy Lucy)

The classic Minnesota Juicy Lucy: two thin beef patties sealed around melting cheddar and caramelized onion, topped with crispy bacon.

Ingredients

8 slicesthick-cut bacon
1sweet yellow onion
1½ lbs680 gground beef
1 cup240 mlsharp cheddar, shredded
¼ tsp1.3 mlkosher salt
¼ tsp1.3 mlblack pepper
olive oil
½ Tbsp7.5 mlbutter
barbecue sauce
4hamburger buns

Instructions

  1. Cook bacon in a skillet over medium-low until crisp; drain on paper towel, reserving about 1 Tbsp grease in the pan.
  2. Raise heat to medium, add the onion and cook 8-10 minutes until golden. Remove and set aside.
  3. Divide beef into 8 balls. Between two sheets of wax paper, press each into a ¼-½ inch patty.
  4. Top one thin patty with ⅛ cup cheddar, a little onion and another ⅛ cup cheese, leaving a border. Cover with a second patty and press the edges firmly to seal. Shape into a thick burger. Check for holes, then season with salt and pepper.
  5. Heat olive oil and butter in the skillet over medium. Cook burgers (2 at a time) about 8 minutes until browned up the sides, then carefully flip and cook 5 minutes more until golden.
  6. Serve on toasted buns with bacon and barbecue sauce.
