
Cheese Stuffed Burgers (Juicy Lucy)
The classic Minnesota Juicy Lucy: two thin beef patties sealed around melting cheddar and caramelized onion, topped with crispy bacon.

Ingredients
| 8 slices | thick-cut bacon | |
| 1 | sweet yellow onion | |
| 1½ lbs | 680 g | ground beef |
| 1 cup | 240 ml | sharp cheddar, shredded |
| ¼ tsp | 1.3 ml | kosher salt |
| ¼ tsp | 1.3 ml | black pepper |
| — | olive oil | |
| ½ Tbsp | 7.5 ml | butter |
| — | barbecue sauce | |
| 4 | hamburger buns |
Instructions
- Cook bacon in a skillet over medium-low until crisp; drain on paper towel, reserving about 1 Tbsp grease in the pan.
- Raise heat to medium, add the onion and cook 8-10 minutes until golden. Remove and set aside.
- Divide beef into 8 balls. Between two sheets of wax paper, press each into a ¼-½ inch patty.
- Top one thin patty with ⅛ cup cheddar, a little onion and another ⅛ cup cheese, leaving a border. Cover with a second patty and press the edges firmly to seal. Shape into a thick burger. Check for holes, then season with salt and pepper.
- Heat olive oil and butter in the skillet over medium. Cook burgers (2 at a time) about 8 minutes until browned up the sides, then carefully flip and cook 5 minutes more until golden.
- Serve on toasted buns with bacon and barbecue sauce.
