- Season the mashed potatoes to taste, then mix in a beaten egg to help bind them.
- Scoop a portion of mashed potato, flatten it in your palm, place a cube of your chosen cheese in the center, and mold the potato around it to form a sealed ball. Make the balls as big or small as you like.
- Set up a breading station: flour in one bowl, eggs beaten with a splash of whole milk in a second, and panko bread crumbs in a third.
- Roll each ball in flour, dip in the egg-and-milk wash, then coat completely in panko bread crumbs.
- Place the balls in the air fryer basket in a single layer without touching, and lightly spray with oil.
- Air fry at about 375°F until golden and crispy and the cheese is melted, then serve warm.
