Ingredients
| 1 1/2 pounds | 680 g | cod fish fillets |
| 1 cup | 240 ml | goat cheese, crumbled |
| 1/2 teaspoon | 2.5 ml | smoked paprika |
| 2 tablespoons | 30 ml | fresh Italian parsley, chopped |
| 2 cloves | garlic, minced | |
| 2 tablespoons | 30 ml | coconut oil, at room temperature |
| — | sea salt and freshly ground pepper, to taste | |
| 1 pound | 455 g | baby potatoes |
| 1/2 teaspoon | 2.5 ml | fresh ginger, grated |
Instructions
- Place the potatoes in the bottom of the inner pot. Add 1 cup of water; then, add coconut oil, salt and pepper. Place the rack over the potatoes.
- Place the cod fish fillets on the rack. Season the fillets with paprika and parsley.
- Secure the lid. Choose the “Steam” mode and cook for 3 minutes at Low pressure. Once cooking is complete, use a quick pressure release; carefully remove the lid.
- Remove the salmon and the rack from the inner pot. Continue to cook the potatoes until fork tender; add the ginger and garlic and cook for 2 minutes more.
- Top with goat cheese and serve. Bon appétit!
