Cheesy Garlic Cloud Bread

A high-protein, low-carb cloud bread made from eggs and cheese, topped with garlic-herb butter and melted mozzarella.

Ingredients

4large eggs
1/4 teaspoon1.3 mlcream of tartar
1/4 cup60 mllight cream cheese
1/2 teaspoon2.5 mlgarlic powder
2 tablespoons30 mlunsalted butter, melted
2 clovesgarlic, minced
1 teaspoon5 mlminced fresh rosemary
1/2 teaspoon2.5 mlminced fresh thyme
1 cup240 mlmozzarella cheese

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate egg yolks and egg whites into 2 large bowls.
  3. Beat cream of tartar with egg whites using an electric hand mixer on High until stiff peaks emerge.
  4. Beat cream cheese and garlic powder with egg yolks on High until just combined; pour into the bowl with the egg whites mixture and fold gently until just combined.
  5. Ladle mixture onto the prepared sheet.
  6. Bake in preheated oven until cloud bread is golden brown, 20 to 25 minutes.
  7. Increase oven temperature to 375°F (190°C).
  8. Stir melted butter, garlic, rosemary, and thyme together in a bowl; brush over the top of the cloud bread. Sprinkle mozzarella cheese over the bread.
  9. Continue baking until the cheese melts, 2 to 3 minutes more.
