
Chicken Cheese Quesadilla
Slow-cooked shredded chicken and mozzarella stacked between tortillas and pressed in a waffle maker.
Ingredients
| 2 | large chicken breasts | |
| ½ cup | 120 ml | water |
| as needed | small tortillas | |
| as needed | mozzarella cheese, shredded | |
| for the iron | cooking spray (Pam) | |
| 1½ tsp | 7.5 ml | paprika (dry rub) |
| 2 tsp | 10 ml | pepper (dry rub) |
| 1 tsp | 5 ml | cayenne (dry rub) |
| 1 tsp | 5 ml | thyme (dry rub) |
| 1 tsp | 5 ml | garlic powder (dry rub) |
| ½ tsp | 2.5 ml | salt (dry rub) |
Instructions
- I took two large chicken breasts and put them in the crockpot. I used this recipe for the dry rub and added 1/2 cup of water.
- Cook for 3 hours on high and then 5 hours on low. When done, it will shred easily.
- Okay, now we're ready for the Quesadilla's. Heat up your waffle maker and let's get started.
- Step 1: Spray with Pam cooking spray.
- Step 2: Place one small tortilla on the bottom of the Waffle Maker and stack with your favorite toppings. Below, Chicken and Mozzarella Cheese. Yum.
- Step 3: Place a 2nd tortilla on top and close the waffle maker.
- Step 4: Cook for about 4 minutes until done. Sooo Yummy!
Dry rub (Amy's): 1 1/2 tsp paprika, 2 teas pepper, 1 teas cayenne, 1 teas thyme, 1 teas garlic powder, 1/2 teas salt.
