Chicken Fried Rice

An easy one-pot chicken fried rice cooked entirely in the rice cooker with peas, carrots, gochujang and sesame oil.

Ingredients

186 grice (Japanese short-grain or medium grain recommended)
water (reduce by the amount of soy sauce used; for a 1x recipe, 2 tbsp)
1 lb455 gboneless chicken thighs, diced
182 gfrozen peas & diced carrots
2 tbsp30 mlsoy sauce
2 clovecloves of garlic, minced
1 tbsp15 mlginger, minced
1 tsp5 mlblack pepper
2 tbsp30 mlgochujang (optional; adjust to your desired spice level)
1/2 tbsp7.5 mlsesame oil

Instructions

  1. Begin by washing your rice. Rinse the rice thoroughly and place it in the rice cooker. Add water as you normally would for the rice you are using, but reduce the total amount by the amount of soy sauce you are using.
  2. Directly into the rice cooker, add the chicken, peas & carrots, soy sauce, garlic, ginger, black pepper, and gochujang. Use your rice cooker paddle to mix everything thoroughly with the chicken and rice.
  3. Close the rice cooker lid and cook on the regular white rice setting until the rice is cooked.
  4. Once done, drizzle your sesame oil on top of the rice. Fluff the rice to combine all the ingredients and enjoy.
