Chicken Korma

Korma, in the Urdu language, simply means "cooked meat." Because of the styles of restaurant cooking, korma is associated with a creamy, mild, and rich sauce. To increase the creaminess of this recipe, almonds are added, and then the dish is "finished" with a touch of coconut milk. A quick blending of the sauce ingredients followed by cooking under pressure in the Instant Pot results in a dish that is rich, creamy, and flavorful, with a thick sauce that is not overly spicy.

Ingredients

1 ounce28 graw almonds (or substitute cashews if you prefer)
1small onion, chopped
1/2 cup120 mldiced tomato
1/2green serrano chile
5garlic cloves, peeled
1 tablespoon15 mlminced ginger
1 teaspoon5 mlground turmeric
1 teaspoon5 mlsalt
1 teaspoon5 mlGaram Masala
1 teaspoon5 mlground cumin
1 teaspoon5 mlground coriander
1/2 teaspoon2.5 mlground cayenne pepper
1/2 cup120 mlwater
1 pinchsaffron strands, soaked in 2 tablespoons milk
1 pound455 gboneless, skinless chicken breasts, thighs, or drumsticks
1/2 cup120 mlfull-fat coconut milk, or more to taste
1 teaspoon5 mlGaram Masala
1 tablespoon15 mltomato paste
1/4 cup60 mlchopped fresh cilantro (optional)
1/4 cup60 mlslivered almonds (for garnish)

Instructions

  1. To make the sauce: In a blender, combine the almonds, onion, diced tomato, serrano chile, garlic, ginger, turmeric, salt, garam masala, cumin, coriander, cayenne pepper, and water. Blend until smooth.
  2. Pour the sauce into the Instant Pot. Add the chicken and stir to coat.
  3. Lock the lid and select Manual (Pressure Cook) at high pressure for 10 minutes. Let the pressure release naturally.
  4. Open the lid and stir in the coconut milk, garam masala, and tomato paste. If needed, press Saute to warm through and thicken slightly. Stir in the cilantro.
  5. Serve garnished with slivered almonds, chopped fresh cilantro, and the saffron-infused milk.
