Chili con carne

A recipe I've made for years in the slow cooker or on the stove top, adapted for the pressure cooker. Really chuffed, it worked out great! I had to thicken it with some rolled oats which if it had been made on the stove I wouldn't have needed to.... But instead of a minimum of 1 and a half hours it was 17 mins plus 10 mins up to pressure and a couple of mins browning the mince.

Ingredients

2 tbs30 mlolive oil for frying
2 wholegarlic cloves
8 oz225 gtinned tomatoes
3 oz85 gtomato puree
1 wholebay leaf
1 tsp5 mlground cumin
1 tsp5 mldried oregano
1 tsp5 mlcayenne pepper
2 tsp10 mlmild chili powder
2 tsp10 mlsalt
1.5 cups360 mlbeef stock
14 oz395 gcan red kidney beans, drained
2 wholemedium sized onions, finely sliced
1.5 lb680 gminced beef
rolled porridge oats (for thickening)

Instructions

  1. I stick everything other than the mince in a jug, brown the mince in the olive oil then add the rest (original recipe says saute onions and garlic - I never have).
  2. Meat button for 15 mins.
  3. 10 mins NPR (natural pressure release).
  4. Needed thickening so I added rolled porridge oats.
  5. Extra 2 mins veg/fish.
  6. And that's it.
