Chocolate Mint Pizzelles
Whole-wheat chocolate pizzelles flavored with peppermint and chocolate mint extract.

Ingredients
| 2 tsp | 10 ml | baking powder |
| ½ cup | 120 ml | butter |
| ¼ cup | 60 ml | cocoa powder |
| 3 | eggs | |
| 1 tsp | 5 ml | vanilla |
| ¾ cup | 180 ml | sugar |
| 1 tsp | 5 ml | peppermint extract |
| 1 tbsp | 15 ml | chocolate mint extract |
| 1½ cup | 360 ml | whole wheat flour |
Instructions
- Use a lot of butter or coconut oil to grease the plates of the pizzelle iron.
- Follow the directions that came with the pizzelle iron to heat it.
- Place a rack for cooling near where you are baking the pizzelles. Once you start cooking them, you have to work quickly.
- To make the eggs and sugar light and fluffy, beat them together in a large bowl.
- Put in the vanilla, butter, and extracts and beat them in.
- Mix flour and baking powder, then add them to the egg mix.
- Blend until it's just smooth. Do not work the batter too much. Mixing will be difficult, and if it's too runny, it won't spread right in the iron.
- Put a teaspoonful of batter on the pizzelle iron in the middle of each circle.
- Close the pizzelle iron over the batter and cook until the steam stops.
- Take the pizzelles out of the iron when the steam stops and they are fully cooked.
- Put them on the rack to cool.
- You can serve them plain or with icing sugar on top or dip them in melted chocolate.
