Cinnamon Smoked Doughnuts

Baked cinnamon doughnuts rolled in cinnamon sugar and finished under a dome of applewood smoke.

Ingredients

1apple wood chips
1 cup240 mlflour
1/2 stickmelted butter
1 tsp5 mlground cinnamon
1 cup240 mlplain white sugar
1 tsp5 mlvanilla extract
1egg
1/2 cup120 mlvanilla yogurt
1 tsp5 mlcinnamon
1 cup240 mlbrown sugar
1 tsp5 mlbaking soda
1spray-on oil

Instructions

  1. Mix all the dry ingredients in a bowl (1 cup flour, 1 teaspoon baking soda, 1 cup brown sugar and 1 tsp cinnamon) until fully combined.
  2. Mix all the wet ingredients (1/2 cup vanilla yogurt, 1 egg and 1 teaspoon vanilla extract) until fully combined.
  3. Combine the dry and wet mixes until fully integrated, then place an open ziplock bag inside a cup (for easy pouring) and transfer 1/3 of the mix into the bag.
  4. (If you don't have a pastry bag) squeeze the mix into a corner of the bag and twist the corner for easy piping.
  5. Grease a doughnut pan with spray-on oil and fill each mold 3/4 of the way.
  6. Bake at 180°F for 10 minutes, or until golden. (Note: this low temperature reflects the source recipe.) While baking, prepare the dusting mix.
  7. Make a mix of 1 cup plain white sugar and 1 teaspoon ground cinnamon; set aside a bowl of 1/2 melted stick of butter.
  8. Lightly dunk each doughnut in the butter and quickly roll in the sugar mix, then place them in a container.
  9. Let the doughnuts cool for about 5 minutes, or until cool to the touch, then insert the smoking-gun hose into the container and seal with saran wrap or a lid.
  10. Place apple wood chips in the smoking chamber, turn on the smoking gun and light the chips, letting the smoke fill the entire container.
  11. Turn off the gun and remove the hose while sealing the container (let very little smoke escape) and let it sit for 5 minutes for maximum flavor, shaking occasionally.
  12. When time is up, remove the plastic and your doughnuts are smokin'!
