Cinnamon Sugar Pizzelle

Ingredients
| 2 cup | 480 ml | plant milk |
| 1/2 cup | 120 ml | coconut sugar |
| 2 tsp | 10 ml | pure vanilla extract |
| 2 tbsp | 30 ml | cinnamon |
| 1 tbsp | 15 ml | baking powder |
| 1/2 cup | 120 ml | vegan butter |
| 3 cup | 720 ml | gluten-free flour |
| 1 tsp | 5 ml | salt |
| 1 | flax egg | |
| 4 tsp | 20 ml | cinnamon (for coating) |
| 2 cup | 480 ml | cane sugar (for coating) |
| for coating | spray oil (for coating) |

- Preheat your pizzelle maker. Mix the flaxseed meal with water to make the flax egg and let it "gel up" while the pizzelle maker heats up.
- Next, start with the milk and add all the other ingredients to a blender. Mix everything until you have a batter that looks like pancakes. It should be thick, but if it's not, add a little more milk.
- Before you cook the pizzelles, make the cinnamon sugar coating by mixing the cinnamon and sugar in a large, shallow bowl. Add the cinnamon and stir it in until it's mixed in.
- Spray oil on both sides of each pizzella one at a time, and then sprinkle cinnamon sugar on each side.
