CL Gulab Jamun

Gulab jamun, an Indian sweet, is a milk-based dessert that is cooked in the air fryer and then soaked in a homemade simple syrup. Garnish with chopped pistachios and edible rose petals before serving.

Ingredients

1 cup240 mlpowdered milk
3 tablespoons45 mlall-purpose flour
2 tablespoons30 mlchopped pistachios
1 teaspoon5 mlground cardamom
1/2 teaspoon2.5 mlbaking powder
1/2 cup120 mlwarm milk
2 tablespoons30 mlghee, melted
—cooking spray
1 1/4 cups300 mlwhite sugar (for simple syrup)
1 cup240 mlwater (for simple syrup)
1 teaspoon5 mlrose water
1/2 teaspoon2.5 mlground cardamom (for simple syrup)

Instructions

Servings: 4, 6, 8 or 10. Ready in: 1 hr. Prep time: 20 min. Cook time: 20 min.

  1. Stir milk powder, flour, pistachios, 1 teaspoon cardamom, and baking powder together in a large bowl. Add warm milk and ghee, and continue to mix until dough is well blended. Allow dough to sit, covered, for 20 minutes.

  2. Stir sugar, water, rose water, and ½ teaspoon cardamom together in a large skillet; bring simple syrup to a boil and simmer for 1 minute. Remove skillet from heat and transfer simple syrup to a bowl.

  3. Preheat air fryer to 350°F (180°C).

  4. Knead dough and form into small, 1-inch balls about the size of a golf ball. Transfer balls to the air fryer basket and spray with cooking spray.

  5. Cook dough balls in the air fryer for 5 minutes. Increase heat to 400°F (200°C) and cook until golden brown, about 10 minutes more.

  6. Place balls into the bowl with simple syrup, squeezing them gently to soak up the syrup.

Mealthy Tip: Rose water can be found at most grocery stores either in the baking aisle or in the aisle with Asian-inspired foods.
