- In a small bowl, dissolve the yeast in the lukewarm milk. Let sit for 5–10 minutes until foamy.
- In a large bowl, whisk egg yolks, sugar, vanilla, and melted butter. Add yeast mixture.
- Stir in flour and mix until smooth.
- In a separate bowl, beat egg whites with salt until stiff peaks form. Gently fold into the batter.
- Cover the bowl and let batter rest for 30–45 minutes in a warm place.
- Preheat your Belgian waffle iron. Lightly grease it.
- Pour batter into the waffle maker and cook until golden and crisp (usually 4–5 minutes).
- Serve warm with powdered sugar, fresh berries, or whipped cream.
