Classic Long Johns

Light yeasted bar doughnuts fried until golden and topped with maple or chocolate frosting.

Ingredients

2 packages (1/4 oz each)active dry yeast
1/2 cup120 mlwarm water (110° to 115°F)
1/2 cup120 mlhalf-and-half cream
1/4 cup60 mlsugar
1/4 cup60 mlshortening
1egg, large, room temperature
1 tsp5 mlsalt
1/2 tsp2.5 mlground nutmeg
3 to 3-1/2 cupsall-purpose flour
oil, for deep-fat frying
1/4 cup60 mlpacked brown sugar (maple frosting)
2 tbsp30 mlbutter (maple frosting)
1 tbsp15 mlhalf-and-half cream (maple frosting)
1/8 tsp0.6 mlmaple flavoring
1/2 cup120 mlconfectioners' sugar (maple frosting)
2 ounces57 gsemisweet chocolate, chopped (chocolate frosting)
2 tbsp30 mlbutter (chocolate frosting)
1/2 cup120 mlconfectioners' sugar (chocolate frosting)
2 tbsp30 mlboiling water
1 tsp5 mlvanilla extract

Instructions

  1. In a large bowl, dissolve the yeast in the warm water. Add the cream, sugar, shortening, egg, salt, nutmeg and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky).
  2. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  3. Punch down the dough; divide in half. Turn onto a lightly floured surface; roll each half into a 12x6-in. rectangle. Cut each portion into twelve 3x2-in. rectangles. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes.
  4. In an electric skillet or deep fryer, heat oil to 375°F (190°C). Fry the long johns, a few at a time, until golden brown on both sides. Drain on paper towels.
  5. For the maple frosting, combine the brown sugar and butter in a small saucepan. Bring to a boil, stirring to dissolve the sugar. Remove from the heat; stir in the cream and maple flavoring. Add the confectioners' sugar; beat for 1 minute or until smooth. Frost the cooled long johns.
  6. For the chocolate frosting, in a microwave, melt the chocolate and butter; stir until smooth. Stir in the remaining ingredients. Spread over the cooled long johns; let stand until set.
