
Classic Long Johns
Light yeasted bar doughnuts fried until golden and topped with maple or chocolate frosting.

Ingredients

| 1/4 cup | 60 ml | shortening |

| 1/2 tsp | 2.5 ml | ground nutmeg |
| 3 to 3-1/2 cups | all-purpose flour | |

| 1/4 cup | 60 ml | packed brown sugar (maple frosting) |
| 2 tbsp | 30 ml | butter (maple frosting) |
| 1 tbsp | 15 ml | half-and-half cream (maple frosting) |
| 1/8 tsp | 0.6 ml | maple flavoring |
| 1/2 cup | 120 ml | confectioners' sugar (maple frosting) |
| 2 ounces | 57 g | semisweet chocolate, chopped (chocolate frosting) |
| 2 tbsp | 30 ml | butter (chocolate frosting) |
| 1/2 cup | 120 ml | confectioners' sugar (chocolate frosting) |
| 2 tbsp | 30 ml | boiling water |
| 1 tsp | 5 ml | vanilla extract |
Instructions
- In a large bowl, dissolve the yeast in the warm water. Add the cream, sugar, shortening, egg, salt, nutmeg and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky).
- Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
- Punch down the dough; divide in half. Turn onto a lightly floured surface; roll each half into a 12x6-in. rectangle. Cut each portion into twelve 3x2-in. rectangles. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes.
- In an electric skillet or deep fryer, heat oil to 375°F (190°C). Fry the long johns, a few at a time, until golden brown on both sides. Drain on paper towels.
- For the maple frosting, combine the brown sugar and butter in a small saucepan. Bring to a boil, stirring to dissolve the sugar. Remove from the heat; stir in the cream and maple flavoring. Add the confectioners' sugar; beat for 1 minute or until smooth. Frost the cooled long johns.
- For the chocolate frosting, in a microwave, melt the chocolate and butter; stir until smooth. Stir in the remaining ingredients. Spread over the cooled long johns; let stand until set.
