
Coffee Marinated Pork Ribs
NB! Reduce the sriracha to 1 tablespoon!!!!! Cook on low for 7 to 9 hours, depending on the quantity (or on high for 4 hours). Ingredients
| 3/4 cup | 180 ml | packed dark brown sugar (or 1/2 cup if you prefer a more savory rub) |
| 2 tablespoons | 30 ml | kosher salt |
| 2 tablespoons | 30 ml | onion powder |
| 2 tablespoons | 30 ml | smoked paprika |
| 1 tablespoon | 15 ml | dry mustard |
| 1 tablespoon | 15 ml | granulated garlic |
| 1 tablespoon | 15 ml | ground black pepper |
| 1 teaspoon | 5 ml | cayenne pepper |
| 1 teaspoon | 5 ml | allspice |
| 1/2 cup | 120 ml | spice rub (your favourite – mine is a BBQ meat rub) |

| 2 cloves | garlic, grated | |
| 2 | limes, zest + juice | |
| 1 | thumb-sized ginger, grated | |
| 1/2 cup | 120 ml | tomato sauce (ketchup) |
| 1/2 cup | 120 ml | cold brew coffee |
| 1/4 cup | 60 ml | sriracha sauce |
| 1/4 cup | 60 ml | hoisin sauce |
Instructions
Preheat the oven to 150°C. Line a baking tray with foil and place a cooling rack on top. Lay the ribs on top of the rack in a single layer. Drizzle over a generous layer of olive oil and rub in the spices over the top and bottom of the ribs. Cover with foil and roast in the oven for 2 1/2 hours until the meat is tender. Remove from the oven and allow to cool.
While the ribs cool make the marinade. Mix all the ingredients together, place the ribs in a dish and pour over the marinade, or place in a resealable bag, and marinade overnight.
To finish the ribs – preheat the oven to your highest grill setting. Grill for 10–15 minutes in the oven turning occasionally and basting constantly with the marinade. Alternatively place on the braai or barbecue.
