Coffee Marinated Pork Ribs

Ingredients

3/4 cup180 mlpacked dark brown sugar (or 1/2 cup if you prefer a more savory rub)
2 tablespoons30 mlkosher salt
2 tablespoons30 mlonion powder
2 tablespoons30 mlsmoked paprika
1 tablespoon15 mldry mustard
1 tablespoon15 mlgranulated garlic
1 tablespoon15 mlground black pepper
1 teaspoon5 mlcayenne pepper
1 teaspoon5 mlallspice
1/2 cup120 mlspice rub (your favourite – mine is a BBQ meat rub)
olive oil
2racks of pork ribs
2 clovesgarlic, grated
2limes, zest + juice
1thumb-sized ginger, grated
1/2 cup120 mltomato sauce (ketchup)
1/2 cup120 mlcold brew coffee
1/4 cup60 mlsriracha sauce
1/4 cup60 mlhoisin sauce

Instructions

Preheat the oven to 150°C. Line a baking tray with foil and place a cooling rack on top. Lay the ribs on top of the rack in a single layer. Drizzle over a generous layer of olive oil and rub in the spices over the top and bottom of the ribs. Cover with foil and roast in the oven for 2 1/2 hours until the meat is tender. Remove from the oven and allow to cool.

While the ribs cool make the marinade. Mix all the ingredients together, place the ribs in a dish and pour over the marinade, or place in a resealable bag, and marinade overnight.

To finish the ribs – preheat the oven to your highest grill setting. Grill for 10–15 minutes in the oven turning occasionally and basting constantly with the marinade. Alternatively place on the braai or barbecue.
