Cola and Coffee Ribs
Grilled pork ribs glazed with a rich cola-and-coffee barbecue sauce, saved from a summer grilling video compilation.
Ingredients
| 2 racks | pork ribs | |
| 2 cups | 480 ml | cola |
| 1 cup | 240 ml | brewed strong coffee |
| 1 cup | 240 ml | barbecue sauce |
| 2 tbsp | 30 ml | brown sugar |
| — | salt and pepper |
Instructions
- Season the ribs with salt and pepper and let them sit while you make the glaze.
- In a saucepan, simmer the cola, coffee, barbecue sauce and brown sugar over medium heat until reduced to a thick, glossy glaze, about 15-20 minutes.
- Set up the grill for indirect heat. Cook the ribs low and slow over indirect heat until tender, about 2-3 hours, keeping the lid closed.
- During the last 20-30 minutes, brush the ribs generously with the cola-coffee glaze, turning and re-glazing a few times until sticky and caramelised.
- Rest for 5-10 minutes, slice between the bones and serve with extra glaze.
