
Corn bread
A bread-machine loaf built on a cooled cornmeal porridge, enriched with egg and a mix of seeds, baked on the quick-bread programme.

Ingredients
| 150 g | Corn flour (cornmeal) | |
| 200 ml | Water | |
| 5 g | Dry yeast | |
| 1 | Egg | |
| 3 tbsp | 45 ml | Olive oil |
| 1 1/3 tsp | 6.7 ml | Salt |
| 1 tsp | 5 ml | Sugar |
| 350-380 g | White flour | |
| 1/2 cup | 120 ml | Mix of seeds (pumpkin, sunflower, poppy, sesame and flax) |
Instructions
Heat 200 ml water and pour it over the corn flour. Stir and leave to cool.
Crack the egg into the bread machine's measuring cup and top up with water to a total of 180 ml.
Place the ingredients in the bread pan in the following order:
- egg and water
- sugar
- olive oil
- half of the flour
- salt
- the rest of the flour
- yeast
Set the bread machine to a quick-bake bread programme of about an hour and a half and start it. During kneading, add the corn mixture a spoonful at a time. If needed, add a little more white flour. After the beep, add the seeds. That's it! Delicious and fragrant corn bread.

- A corn porridge is made from 200 ml hot water and 150 g corn flour. This porridge is added to the bread machine during the kneading cycle — spoonful by spoonful while the dough is being kneaded. Separately, when kneading the dough, additional liquid is used which, together with the lightly beaten egg, should total 180 ml. Diana, may I ask why exactly it is made separately? And also, for what loaf weight are the given proportions (750 g or 1 kg)? Maybe that last part doesn't matter much... When only corn flour is added without being dissolved in hot water, the bread becomes veeery hard. The proportions are for a 750 g loaf. Good luck and thanks for stopping by :)!
