
Cranberry Champagne Punch
A festive party punch of dry champagne, white rum and cranberry juice served over a giant decorative ice ring.

Ingredients
| 1 | large lemon, thinly sliced | |
| 1 cup | 240 ml | fresh cranberries |
| 1 cup | 240 ml | fresh mint leaves |
| 2 | bottles dry champagne (750 ml each) | |
| 1 1/2 cups | 360 ml | white rum |
| 1 1/2 cups | 360 ml | cranberry juice |
Instructions
- Place lemon slices, cranberries, and mint leaves into a large bowl that's about 1/3 the size of the bowl you plan to use for your punch. Fill the bowl with water and freeze until it's party time, at least 2 hours.
- Run warm water over the bottom of the bowl to release the giant ice cube; place it flat-side up into your punch bowl.
- Pour champagne, rum, and cranberry juice into the bowl; stir. Mealthy Tip: The larger the ice cube, the longer it takes to melt! The ice ring ensures there's no watered down punch with this recipe. If you like, substitute unsweetened pomegranate juice for the cranberry juice and garnish with pomegranate seeds in place of whole cranberries.
