
Cranberry Loaf
A cream cheese cranberry loaf, tart with fresh or frozen cranberries and rich with cream cheese.

Ingredients
| 2 cups | 480 ml | flour |
| 2 cups | 480 ml | cranberries, fresh or frozen |
| 1 1/2 cups | 360 ml | sugar |
| 1 cup (2 sticks) | unsalted butter, room temperature | |
| 1 package (8 oz) | cream cheese, room temperature | |
| 4 | eggs, room temperature | |
| 1 1/2 tsp | 7.5 ml | vanilla extract |
| 1 1/2 tsp | 7.5 ml | baking soda |
| 1/2 tsp | 2.5 ml | salt |
Instructions
1 hour 30 minutes to prepare. Serves 8.
- Preheat oven to 350°F and lightly grease a 9x5-inch loaf pan with butter or non-stick spray.
- Cream together butter, cream cheese and sugar in a large bowl or mixer, then beat in the eggs one at a time along with the vanilla.
- In a separate bowl, whisk together flour, baking soda and salt until combined. Gradually mix the dry ingredients into the wet ingredients, stirring until just incorporated.
- Gently fold in the cranberries, then pour the mixture into the greased baking dish. (You could also use 2 loaf pans if desired.)
- Place in the oven and bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool at least 15 minutes before serving. Enjoy!
