
Dorayaki (Japanese Red Bean Pancakes) with Nutella
A Japanese snack: fluffy honey pancakes sandwiched around sweet Azuki red bean paste, with a fun variation using Nutella and banana.

Ingredients

| 100 g | Cake flour | |
| 1/2 tbsp | 7.5 ml | Baking soda |
| 50 g | Granulated sugar | |
| 1 tsp | 5 ml | Honey |
| 2 tbsp | 30 ml | Water |
| — | Oil | |
| — | Tsubu-an (sweet Azuki red bean paste with skins) | |
| — | Nutella | |
| — | Banana, sliced |
Instructions
Pancakes:
- Crack the eggs into a bowl. Add the sugar and mix well. Add the honey and stir again.
- Combine the cake flour with the baking soda.
- Add the water and mix into a smooth, uniform batter.
- Cover with plastic wrap and rest in the fridge for 30 minutes.
- Heat cooking oil in a pan on low. Pour 2 tbsp of the batter onto the pan and cook until bubbles appear on the surface. Flip with a spatula and cook until browned on the other side.
- While still hot, place in a closed container (or cover with plastic wrap) to keep it moist, then continue making the next pancake.
Fillings:
- Make a sandwich with Tsubu-an filling. Press the edges to close.
- Nutella and banana slices are a delicious combination!
Wrap each dorayaki in plastic wrap to keep them moist. Keep the Nutella dorayaki in the fridge; the Nutella firms up nicely.
