
Double Chocolate Muffins
Keto-friendly double chocolate muffins made with almond flour, cocoa and sugar-free chocolate chips.

Ingredients
| 2 c. | almond flour | |
| 3/4 c. | unsweetened cocoa powder | |
| 1/4 c. | Swerve sweetener | |
| 1 1/2 tsp. | 7.5 ml | baking powder |
| 1 tsp. | 5 ml | kosher salt |
| 1 c. | butter, melted (2 sticks) | |
| 3 | large eggs | |
| 1 tsp. | 5 ml | pure vanilla extract |
| 1 c. | sugar-free dark chocolate chips, such as Lily's |
Instructions
- Preheat oven to 350°F and line a muffin tin with liners. In a large bowl whisk together almond flour, cocoa powder, Swerve, baking powder, and salt. Add melted butter, eggs, and vanilla and stir until combined.
- Fold in chocolate chips.
- Divide batter between muffin liners and bake until a toothpick inserted into the middle comes out clean, 12 minutes.
