
Durban Bunny Chow
Ingredients

| 1 | large yellow onion, chopped | |

| 1 tsp | 5 ml | turmeric |
| 1 tsp | 5 ml | salt |
| 1 tsp | 5 ml | minced fresh ginger |
| 1 tsp | 5 ml | chili powder |
| 1/2 tsp | 2.5 ml | fennel seeds |
| 1/2 tsp | 2.5 ml | whole coriander seeds |
| — | cilantro or coriander leaves, as garnish | |
| 2 | cloves | |
| 1 | star anise | |
| 2 | whole cardamoms | |

| 4 | peppercorns | |
| 1 tsp | 5 ml | sugar |
| 2 medium to large | cloves of garlic, crushed | |

| 16 ounces | 455 g | chopped tomatoes |
| 14 ounces | 395 g | tomato puree |
| 7 ounces | 200 g | beef stock |
| 2 | medium red or white potatoes, quartered | |
| — | small minced habanero pepper, or to taste | |
| 3 1/2 ounces | 99 g | olive or other oil |
| 1 | small loaf unsliced bread, cut in half and hollowed out |
Instructions
Careful with the habanero.
Prep: Set pressure cooker to sauté setting. When hot sauté onion, ginger and salt in oil until onion is glassy. Add remaining spices. Mix and continue to sauté about 1 minute to release those wonderful flavors and fragrances. Turn cooker off. Add meat and continue to sauté for about a minute to 90 seconds. Add remaining ingredients, close cooker and set valve on top to "sealing." Cook at high pressure for 30 minutes. Put wet cloth over pressure release valve and open valve to release pressure. Serve in scooped out bread loaf halves. Garnish with cilantro or coriander leaves and optionally chopped tomatoes. To control heat, habanero pepper can be thinly sliced and used as additional garnish instead of cooked into chow. If you don't like hot, omit it altogether.
